What is green tea extract ?
The active ingredient of green tea extract is tea polyphenols. They are a type of polyhydroxy compound contained in tea, short as TP. The main chemical components are compound of catechins,flavonoids and flavonols, anthocyanins, phenolic acids and depsilic acids, polymerized phenols etc. Among them, catechin compounds are the main components of tea polyphenols, accounting for 65% to 80%, consisting of Catechin compounds mainly include catechin (EC), epigallocatechin (EGC), catechin gallate (ECG) and epigallocatechin gallate (EGCG).

Property
Tea polyphenols are light yellow to brownish-yellow solid powder with a slight tea fragrance, with astringent taste, easily soluble in water, ethanol, ethyl acetate, and slightly soluble in oils. It has good heat resistance and acid resistance, and is very stable in the range of pH 2~7. Slightly hygroscopic, the pH of the aqueous solution is 3~4. It is easy to oxidize and turn brown under alkaline conditions. It will generate green-black compounds in case of iron ions.
Function
1.Tea polyphenols have a strong antioxidant effect. It is due to the performance of the catechin monomer EGCG, whose reducibility can even be 100 times that of L-isocorbic acid. Among the tea polyphenol catechin monomers, the antioxidant capacity is EGCG>EGC>ECG>EC>BHA,
2.tea polyphenols also work well as antibacterial and antiseptic , such as inhibiting Staphylococcus, Escherichia coli, Bacillus subtilis, etc. Tea polyphenols can absorb peculiar smell in food, so it is a certain deodorizing
3.It has a protective effect on pigments in food. It can not only play the role of natural pigments, but also prevent food from fading. Tea polyphenols also have the effect of inhibiting the formation and accumulation of nitrite.
